Bistro c.v.
Bistro c.v. opened it’s doors in downtown Steamboat Springs in Summer 2007 and was quickly heralded as not only one of Steamboat’s best restaurants, but one of Colorados. The goal at bistro c.v. is to celebrate and showcase the fresh ingredients of the season. Bistro c.v. was Colorado’s first restaurant to employ sous-vide cooking. The phrase is French for "under vacuum,' and it has become the rage New York, Los Angeles and Miami -- and now Steamboat!

This technique, which is fabulous for meat, involves cooking vacuum-sealed ingredients at temperatures high enough for safety but low enough to perfectly meld flavors of carefully selected simple and natural ingredients. The restaurant is also using natural and organic ingredient, sourced as locally as possible.

In keeping with Steamboat's "black tie and blue jeans" sort of style, Bistro c.v. tables are covered with white linens but the servers wear jeans and button-down shirts.

number 3 Noodles and More Saigon Café
This simply authentic Vietnamese restaurant serves curries, noodles, soups (pho) and sushi. It has been around Steamboat for at least a year, but has only recently come into its own as one of the best places in Steamboat to get excellent sushi – from traditional to tantalizing. Just step inside on a stormy night in the Spring to see if filled with loyal locals!
number 4

Azteca Taqueria
Ok, so it’s not really all that new, but this is ‘can’t miss’ Steamboat favorite. Since 1999, Steamboat Springs locals and visitors have flocked to Azteca Taqueria for made to order burritos, tacos, quesadillas and other mexican fare. In Summer 2006, Azteca relocated in the historic Squire Building on 9th Street behind Lyon's Drugstore.

The Steamboat Pilot & Today wrote, "For great, inexpensive Mexican food on the go, you can't do better than this." The rough guide to the Rocky Mountains..."one of the The Boats most authentic local hangouts"..."Steamboats favorite quick serve taco and burrito bar..."

Grab a" justifiably famous breakfast burrito" (Steamboat Pilot and Today) on your way to the slopes or a day on the river, join the locals who line up for Steamboat's "Best bargain lunch" (Best of the Boat Readers Choice). During the warmer months, we offer outdoor seating, where you might catch a glimpse of ski jumpers training on Howelson hills year round ski jump.
